‘Very special’ Ocean Springs restaurant scores Michelin nod in 5 months. How’d it happen?

The brand new hotspot combines Southern staples with global flavors and is run by two chefs under 30. “Young chefs have a voice and want to be heard. Women chefs have a voice and want to be heard.” Mingouin, a restaurant in Ocean Springs, Mississippi, has been awarded a Michelin Guide to the American South by Michelin less than six months after opening at The Roost, a boutique hotel. The restaurant's menu includes dishes from the Gulf Coast to East Asia, including six chewy sausage and shrimp gyoza, lamb chops served over a creamy salsa verde, and pork belly skewers. Executive chef Brennan Edmonds and former executive chef Lauren Joffrion, who helped curate the menu, saw the recognition as a sign of a trend for young chefs and women who view the culinary arts as a form of self-expression. Since opening in May, the restaurant has sold more than 10,000 gyozas, each folded by hand, each folding by hand. The team continues to nurture young talent, including 21-year-old sous chef Kaylee Seymour.
